What are tannins?
Plant form tannins for defense against microbial attacks as well as prevent pests from eating them. Tannins belong to a group of complex molecules called flavonoids or polyphenols. The best known sources are tea and rhubarb, who’s drying effects on the palate, is well known. Few of the common tannin containing substances are: dark chocolate, grape seeds, whole nuts (hazelnut, walnut, almonds), whole spices and berries.
